This tasty Black Bean Avocado Salad is super easy to make!

Ingredients
  • 2 Tbsp. lemon juice
  • 1 Tbsp. whole-grain mustard
  • 2 Tbsp. extra virgin olive oil
  • 1 cup canned black beans
  • 1 cup fresh or frozen corn, thawed
  • 1 avocado, diced
  • ½ cup diced sweet red pepper
  • ½ cup coarsely chopped cilantro
  • ¼ cup diced celery
  • 2 green onions, trimmed and thinly sliced (about ¼ cup)

Instructions
  1. Whisk together lemon juice and mustard in large bowl.
  2. Add oil and whisk until smooth.
  3. Add all remaining ingredients and gently toss to combine.
  4. Season with salt and pepper. Serve.
