Peach Pico de Gallo

Peach Pico de Gallo
 
This is perfect for summer. It's absolutely delicious served on fish.
Ingredients
  • 1 c. peaches, diced
  • 1 c. mango, diced
  • ¼ c. onion, diced
  • ¼ c. yellow pepper, diced
  • 2 Tbsp. cilantro, minced
  • ¼ c. lemon juice
  • ½ chipotle, minced
  • Sea salt
Instructions
  1. Combine all ingredients in a small saucepan and heat on medium. Makes 2 cups.
