Ingredients
  • ¼ c. chopped mushrooms
  • ¼ c. chopped celery
  • ⅓ c. chopped green onions
  • ¼ c. chopped red pepper
  • 1 c. brown rice
  • 2½ c. water
Instructions
  1. Preheat oven to 350 degrees.
  2. Coat a large 3 qt. baking dish with cooking spray.
  3. Saute vegetables in a small frying pan until tender.
  4. Place all ingredients in baking dish and cover.
  5. Bake in oven for 45 minutes.
