Squash Hummus

This is not only yummy but it only takes 15 minutes to make. You can use any kind of squash you like – pumpkin, butternut or acorn. Makes about 2 1/2 cups.
Ingredients
- 2 Tbsp. tahini
- 2 Tbsp. lemon juice
- 1 tsp. cumin
- 3/4 tsp. sea salt
- 1/8 tsp. fresh ground pepper
- 2 cups squash (previously cooked)
- 3 cloves garlic
- 2 Tbsp. cilantro
Instructions
- Place all ingredients in a food processor. Blend until smooth. Serve chilled.
