Ingredients
  • 1 lb. boneless, skinless chicken breasts, cut into 2 inch pieces
  • 2 cloves garlic, minced
  • 1 (10 oz.) pkg. mushrooms, halved
  • 1 small zucchini, halved and cut into 1/2 in. slices
  • 2 tomatoes, chopped
  • 1/2 tsp. sea salt
  • 1/2 tsp. pepper
  • 1/2 tsp. thyme
  • 1/2 tsp. oregano
Instructions
  1. In a large nonstick skillet over medium heat brown chicken for 2 – 3 minutes. Stir chicken and add remaining ingredients.
  2. Saute for 5 minutes, stirring once or twice. Cover with a lid, turn heat down to low and simmer for 10 – 12 minutes.
