Chicken Zucchini Penne
This makes a quick and healthy dinner!
Serves: 1
  • 3 oz chicken
  • 2 tsp extra virgin olive oil
  • ½ zucchini, sliced
  • ¼ red onion, sliced
  • 6 grape tomatoes
  • 1 clove garlic, minced
  • ½ cup penne pasta
  1. Saute chicken in olive oil, zucchini, onion, tomatoes and garlic. Cook pasta according to package directions. Serve chicken mixture over pasta. Makes 1 serving.
