- 1 lb. boneless, skinless chicken breasts, cut into 2 inch pieces
- 2 cloves garlic, minced
- 1 (10 oz.) pkg. mushrooms, halved
- 1 small zucchini, halved and cut into ½ in. slices
- 2 tomatoes, chopped
- ½ tsp. sea salt
- ½ tsp. pepper
- ½ tsp. thyme
- ½ tsp. oregano
- In a large nonstick skillet over medium heat brown chicken for 2 - 3 minutes. Stir chicken and add remaining ingredients.
- Saute for 5 minutes, stirring once or twice. Cover with a lid, turn heat down to low and simmer for 10 - 12 minutes.
