This is not only yummy but it only takes 15 minutes to make. You can use any kind of squash you like - pumpkin, butternut or acorn. Makes about 2½ cups.
Ingredients
2 Tbsp. tahini
2 Tbsp. lemon juice
1 tsp. cumin
¾ tsp. sea salt
⅛ tsp. fresh ground pepper
2 cups squash (previously cooked)
3 cloves garlic
2 Tbsp. cilantro
Instructions
Place all ingredients in a food processor. Blend until smooth. Serve chilled.
