These muffins are not only gluten free, they're low sugar as well. Oh, and they're also delicious!
Serves: 10
  • 2 ripe bananas, mashed
  • ⅓ cup coconut oil
  • 3 eggs
  • 2-4 Tbsp sucanat or turbinado sugar or maple syrup
  • 1 tsp vanilla extract
  • ½ cup coconut flour
  • ½ tsp baking soda
  • ½ tsp ground nutmeg
  • ¼ tsp salt
  1. Preheat oven to 350 degrees.
  2. Combine the first 5 ingredients until well blended. Stir in the remaining 4 ingredients until combined. Put 10 paper liners in 12 cup muffin pan. Divide batter evenly among muffin cups.
  3. Bake at 350 degrees 20-25 minutes or until tops of muffins are golden brown.
