Peach Pico de Gallo
This is perfect for summer. It’s absolutely delicious served on fish.
Ingredients
- 1 c. peaches, diced
- 1 c. mango, diced
- 1/4 c. onion, diced
- 1/4 c. yellow pepper, diced
- 2 Tbsp. cilantro, minced
- 1/4 c. lemon juice
- 1/2 chipotle, minced
- Sea salt
Instructions
- Combine all ingredients in a small saucepan and heat on medium. Makes 2 cups.
