- ¼ c. chopped mushrooms
- ¼ c. chopped celery
- ⅓ c. chopped green onions
- ¼ c. chopped red pepper
- 1 c. brown rice
- 2½ c. water
- Preheat oven to 350 degrees.
- Coat a large 3 qt. baking dish with cooking spray.
- Saute vegetables in a small frying pan until tender.
- Place all ingredients in baking dish and cover.
- Bake in oven for 45 minutes.
