- 6-8 medium beets
- Olive oil
- 4 cloves garlic, minced
- Preheat oven to 350 degrees.
- Wash and thoroughly scrub beets.
- Line a cookie sheet with parchment paper. Place beets on cookie sheet.
- Drizzle with olive oil and sprinkle garlic over beets.
- Cover tightly with tin foil and place in oven.
- Bake for 1 hour. Remove from heat.
- Let cool until beets are easy to handle.
- Slip skins off, slice, and serve.
