Salad with Pine Nuts
This makes a great side salad to any entree!
Serves: 1
  • 2 cups chopped Romaine
  • 2 Tbsp chopped carrots
  • 2 Tbsp crumbled goat or feta cheese
  • 1 Tbsp diced onion
  • 15 pine nuts
  • 2 Tbsp red wine vinegar
  • ½ tsp extra virgin olive oil
  1. Toss together first 5 ingredients. Pour vinegar and olive oil over top. Makes 1 serving.
