Tomato and Bean Salad
This makes a wonderful side dish to any entree!

- ¾ cup cooked cannellini beans
- ½ cup tomatoes, chopped
- ¼ cup cooked quinoa
- 1 Tbsp red wine vinegar
- 1 tsp extra virgin olive oil
- Toss first three ingredients together. Add vinegar and olive oil. Toss and enjoy. Makes 1 serving.
