Tomato and Bean Salad

Tomato and Bean Salad
This makes a wonderful side dish to any entree!
  • ¾ cup cooked cannellini beans
  • ½ cup tomatoes, chopped
  • ¼ cup cooked quinoa
  • 1 Tbsp red wine vinegar
  • 1 tsp extra virgin olive oil
  1. Toss first three ingredients together. Add vinegar and olive oil. Toss and enjoy. Makes 1 serving.
