Turkey Salad

Ingredients
  • 4 oz ground turkey
  • 1/4 tsp garlic powder
  • 1/4 tsp cumin
  • 3/4 cups cooked black beans
  • 1/2 cup tomatoes, diced
  • 1/2 cup cottage cheese
  • 2 Tbsp diced onion
  • 2 cups spinach
  • 2 Tbsp red wine vinegar
  • 1 tsp extra virgin olive oil
Instructions
  1. Cook turkey in garlic powder and cumin. Put spinach on plate and put turkey mixture, black beans, tomatoes, cottage cheese and diced onion on spinach. drizzle with vinegar and olive oil. Serves 1.
