Salad with Pine Nuts
This makes a great side salad to any entree!

Ingredients
- 2 cups chopped Romaine
- 2 Tbsp chopped carrots
- 2 Tbsp crumbled goat or feta cheese
- 1 Tbsp diced onion
- 15 pine nuts
- 2 Tbsp red wine vinegar
- ½ tsp extra virgin olive oil
Instructions
- Toss together first 5 ingredients. Pour vinegar and olive oil over top. Makes 1 serving.
